Ola al forn

Preparation

Cut the potatoes into cubes, the leeks into round slices and the ribs in pieces. Place the ingredients in the ola (a large earthenware pot), alternating in layers: first the beans, then the leeks and potatoes, finishing with the ribs. When the ingredients are finished, cover with water and add a spoonful of coarse salt. Cover with its lid and bake for 12 hours in a wood-fired oven.

  • 1 kg potatoes
  • 1 kg of borlotti beans
  • 1 kg leeks
  • 4 pork ribs
  • salt
  • 2 litres of water
